A delicious, light and refreshing dish to enjoy - infused with Absolute Vodka, chilli, cucumber and more!


  • 1 cup of Absolute Vodka
  • 360g of rock salt
  • 460g of brown sugar
  • Half continental cucumber sliced
  • 1 long red chilli sliced
  • 600g fillet of kingfish (skin on and deboned)
  • FoodFX Aioli


  1. Combine all ingredients except the kingfish in a bowl and mix well
  2. Using a deep flat baking tray, place cling wrap on base of tray leaving plenty of excess cling wrap to make a parcel. Place the cure mix on the tray, then kingfish side down, then cover with remaining cure, wrap tight and refrigerate for 24 hours
  3. After 24 hours remove from cure, rinse under cold water and pat dry with a clean cloth
  4. Slice thinly on an angle and serve with FoodFX Aioli
